Why are they still trying to stop the Epstein documents from coming out? No, I don't believe that they have, but they could. Those photos are the smoking gun. It would not surprise me if they announced that some of the files are missing.

Whether they are declared "missing" or not, the original court might still have them.

The question remains: what will happen to Bondi over this.

If they were capable of destroying the evidence to get rid of the issue, then why haven't they done that already?

And if the answer is, they have done it already, then there is no reason to object to their release.

then you also have to say that destroying court evidence is a federal offense. Then the question is: what happens to AG Pam Bondi.

Destruction of court files or evidence is a federal offense, which can lead to fines, imprisonment, and even forfeiture of office. Federal laws, such as 18 U.S.C. § 1519, make it a crime to knowingly alter, destroy, or conceal records with the intent to impede a federal investigation or case. Other laws, like 18 U.S.C. § 2071, specifically target custodians of public records who do so.

They'd only do it if they thought they'd get away with it - and I don't think they're that crazy. Which is why I think the people who insist that they've already destroyed the files are silly. I am confident the files still exist in their original form (somewhere) and they will eventually see the light of day (someday - but I have no idea when).

According to this video by Allison Gill, there are more than 1000 people who have seen the files and know what in them. She has talked to some of these people and thus has specific details on what in there.
