They don't eat that over there.

My husband was from Galway and he hated it as do I!

... my favorite way to have soda bread is toasted and buttered for breakfast.

My favorite way to have corned beef is on rye bread.

The Welsh have a similar dish called Cawl. It's made with lamb or beef and has leeks, parsnips and swedes (turnip). I also add cabbage because I love the flavor it adds.

As for Soda Bread, I LOVE it. I make the version with raisins.

(This recipe uses kale, but it is also often made with cabbage, especially Savoy cabbage, or chard instead of the kale).

https://en.m.wikipedia.org/wiki/Boxty

"...The most popular version of the dish consists of finely grated raw potato and flour. The grated potato may be strained to remove most of the starch and water but this is not necessary. The mixture is fried on a griddle pan for a few minutes on each side, similar to a normal pancake. The most noticeable difference between boxty and other fried potato dishes is its smooth, fine-grained consistency.

An old Irish rhyme is: "Boxty on the griddle; boxty on the pan. If you can't make boxty, you'll never get a man!"[1]

recipe was so easy because everything was one. Stir together: 1 cup mashed potatoes; 1 cup grated potatoes (squeeze out moisture) 1 cup flour; 1 tsp salt; 1 tsp baking powder. Stir in 1 cup buttermilk. Fry in med to med low oil about 4 or 5 minutes a side. We always ate them with sour cream. We used whatever green we had on hand for our Colcannon and always stirred in a lot of scallions, too, with a ton of butter ( my grandma said “knob” of butter). We made our soda bread with a mix of white and wheat flour and with raisins or currants. I’m getting hungry 😁

I love cabbage without corned beef, too!
Don't care for bread though. I know, I'm weird.
