Anyone want a great vegan Strawberry "ice cream" recipe?

Found it on the web....we use a cuisinart ice cream maker (the inexpensive type that you have to freeze the mixing container for 24 hours in advance).

Two cups of frozen strawberries - we used berries we froze that we got from the market last summer - chop them up using the metal blade in a food processor. Put into a large bowl - add 1/2 cup of honey, 2 tbsp lemon juice, 1 tsp vanilla - mix well and leave at room temp for a few hours (so that the berry mixture thaws and combines well with the other liquids).

Add 2 cups of almond milk - stir until well blended, then freeze in the ice cream maker for 20 minutes.

We found that it tasted better after resting in the freezer for a few hours (the honey flavor blended in and the berry flavor emerged) - and even better on day 2.

If you want it to be vegan substituting agave nectar would probably work fine.

are taking, they prefer honey to agave, because agave is more chemically manipulated.

The Engine 2 is odd, really - more severe in some ways than vegan, not so much in others. We are just trying to get through it eating enough calories/getting all needed nutrition each day!

Whether or not it's more or less processed than other things, honey's not vegan.
