What's for Dinner, Aug. 25, 2023

Cold poached salmon with sour cream-mascarpone dill sauce.

Later I'm making a sheet pan roast with zucchini and feta cheese with balsamic glaze.

Ginger kombucha.

Dessert: chocolate vanilla ice cream sandwich.

Cold coffee, decaf

My mom used to make them many years ago. It’s a low budget meal (we were fairly poor). Probably been 40 yrs since I’ve had them (made from canned salmon).
