What's for Dinner, Mon., Nov. 27, 2023

Creamy butternut squash and apple soup with toasted almonds on top.

Eggplant-mozzarella-red pepper sandwiches with chipotle mayo. Toasted.

Tangerine kombucha.

Sweet orange tea. Not a thing for dessert in the house. Will have to go out if I want something sweet.

Some aspiring theater composers and lyricists will receive an auspicious award and the event is always entertaining and delicious. As of right now, I have no idea what the menu will be but at these types of events, they usually serve a meat, a fish and a vegetarian choice. It’ll be a fun night regardless!

I baked a ham a week ago, and the leftovers are insane. I've already made ham and bean soup and frozen about a half dozen portions.

Tonight's meal won't freeze, but I made a very small amount, and will finish it tomorrow.
