What's for Dinner, Sun., July 14, 2024

Chilled honeydew soup with blueberries.

It's so easy: just put the melon, lime juice, and mint in a blender and puree until smooth. When serving put 1/2 cup of blueberries in each bowl. Garnish is lime and mint sprig.

Shrimp cocktail.

Cherry kombucha

Dessert: Cold tea and baklava.

Unfortunately, I guess the town's too small to make it profitable. I *really* miss it! I loved the Rosemary/Olive oil. Just perfect for a base for bread dipping. I checked out the website you listed, and even the bottles look very similar to the ones used by ours. I do know the prices were relatively high compared to reg olive oil, but ah... the depth of the flavors! You just reminded me how sorely I miss that little shop!

5. leftover brunch

Al had an appointment for an MRI this morning (yes, on a Sunday morning lol), so we missed breakfast. We stopped on the way home. I had a breakfast burrito w/ home fries, and the leftovers are my dinner tonight.

I actually baked today, despite the heat. I had some peaches that were ripe and needed to be used up, so I made a peach and blueberry crumble.

(Today is the 4th anniversary of my mother's passing. Baking is one way that I commune w/ her. It seemed the right thing to do today.)

9. Fruit cobbler

A neighbor gave me some peaches, a friend lots of blueberries, I had cherries and frozen blackberries. Made a fruit cobbler, first time. How does a crumble differ from a cobbler? The cobbler recipe has the fruit on top of the cobbler mixture, got soggy very quickly, any advice?

The fruit goes on the bottom.

(My measurements here are estimates)

I mixed my berries (not quite 1 pint) and sliced peaches (4 peaches) w/ not quite 1/2 cup sugar, 3 tbs. cornstarch, the juice of 1/2 lemon, and about 1/2 tsp cinnamon.

for the crumble topping it was 1/3 cup oatmeal, 1/2 cup flour, 1/3 cup sugar (I used brown sugar) and about 5 tbs. melted butter.

The fruit went into the baking dish first, and then the crumble topping.

I baked covered at 350 degrees for 35 minutes, and then uncovered, raised temperature to 400, and baked for another 15-20 minutes to brown the top.

My baking dish is a small Pampered Chef clay-like round dish.

Lemon juice, oatmeal and cinnamon, sounds great...will be my next new recipe baking experiment!

with store-bough curry paste, coconut milk, a bunch of vegetables, and leftover chicken, enhanced with extra ginger, garlic, and Thai basil. Peach cobbler for dessert, since the flat I got at Costco a few days ago is already starting to turn.
