What's for Dinner, Tues., March 18, 2025

I'm heating up corned beef and cabbage with potatoes that the RG convinced me to get. Also carrots.

He told me there is no flavor affinity with the corned beef and cabbage & carrots. He said that's just how the Irish fixed it 'cuz that's what they had. The flavor comes from mixing the potatoes and the beef in cooking. Well, duh. I'm giving some to friends, so I fixed the potatoes for them but I will still have my cassava, cubed, and my flavor will come from having boiled the potatoes in the broth. I added herbs, too.

Kombucha: mulberry.

Dessert: Cake & ice cream. Hot tea.

2. My "hobo" cabbage sausage casserole:

In a Dutch oven:

Layer of small cut up potatoes
3 leeks, sliced into 1/4” discs
Green cabbage, cut med/fine
A pound and a quarter of fresh sweet Italian sausage
More cabbage on top and a few dots of butter
Black pepper and herbes de Provence on every layer
A cup of white wine.

Into a 350 degree oven for 2+ hours, until cabbage is tender.
Served with buttered bread and perhaps a dab of horseradish.

Salad first.

Later tonight strawberry jello with a teaspoon of cool whip.

Looks like the bad storms are moving in here in Indiana. Clouds, wind, thunder, rain and tornado warnings.

I liked how they had a study for just about every point they asserted.

I have to send this to my brother. He's actually a T2 diabetic. I runs in the family but so far I'm able to keep the A1C low enough that I don't have to take medication.

6. BBQ Lentil Wraps

Lentils cooked in veggie broth, tomato paste, minced onion and garlic. When done I chilled and mixed in Carolina BBQ sauce. To the lavash flat bread I applied vegan mayonnaise and Dijon mustard before slathering on the lentils along the top. I layed on thinly sliced tomatoes and red onion, then applied the whole romaine leaves before rolling up the wraps. Fruit salad of blueberries, raspberries, strawberries and mandarin orange sections for dessert. Cheers!🥂
