No cooking for me today, since I am inundated with plants started by little middle-schoolers. I have to sort them out by cool weather and warmer weather plants so I know what greenhouse to put them in.
Crusty artisan bread and carrot sticks and peppers to dip in my baba ganoush. After sitting in the frig for a day or so, the flavors have melded and are oh so good! Then a chef's salad with chicken, ham, and avocado, provolone cubes, cucumber, cherry tomato, and red onion.
Later tonight I'll have dessert--a double-chocolate Eskimo pie with decaf coffee.

(6,718 posts)Mexican hashbrowns with avocado, cheese and pico. Maybe grill off some sweet potatoes with cumin. Flour tortillas and a mixed fruit salad.

The eggs were good, but not as good as the eggs my grandma, who raised chickens, or mom, who got eggs from our neighbor who raised chickens, would cook ... with the yolks looking pink once the bacon fat had been spooned over enough to cook the film of white over it.

(5,319 posts)I fell off my front porch earlier in the week and cracked my hip. Standing any length of time is not to be advised, and walking is more than a bit of a pain (pardon the pun). So, I think I'm going to enjoy Mongolian Beef that someone else has prepared for me and I refuse to feel guilty about it. Money's tight, but sometimes circumstances outweigh everything. Besides, I quickly added up a grocery bill of the ingredients I'd need for what I had planned (Tuscany chicken) and I really couldn't see a heck of a lot of difference in price between make it myself and take out. That is, unless my favorite chinese restaurant has increased their prices. At least, that's how I sold it to hubby! (LOL) Meanwhile, I'm going easy on the hip, since there's nothing they can really do about a small crack.. and how can a small crack hurt so much?! ARGH!

He likes to cook; he's just busy with his career right now. I get very envious when he orders up a number of Indian dishes. Haven't had Indian food in an age.
Anyway, he says the difference is small and he doesn't like to contend with leftovers, so this is how he does it.

It was a pan seared duck breast finished in the oven with a side of cheese raviolis in a mushroom sauce . Mushrooms sautéed in the duck fat rendered with the searing , a slight roux to thicken . Touch of wine , splash of chicken stock .
Tonite i warmed gently the ravs and sauce in the microwave, sliced then cubed the leftover duck and topped it with a thumb of shredded fontina cheese .

(707 posts)Cubed chuck with paprika sauce and sour cream over noodles.
I made 6 pints and canned 5 (minus the sour cream) for the pantry. On any late night, I can start the noodles, heat a jar, add the sour cream and serve. One more thing for stocking up.
