What's for Dinner, Thurs., May 1, 2025

Heading out to a May Day protest in a bit, so I prepared a couple cold items for when I return home:

Caramelized onion hummus with carrots, celery sticks, and sweet peppers.

Breaded pork cutlet with applesauce.

Tossed green salad using red tip and Bibb lettuce. Cucumbers, scallion, celery. Thousand Island dressing.

Cherry kombucha.

Dessert: will pick something up on the way home. Might post back if it's good!

I'm in Panama (solo, bummer) for some business. Today, May Day is a national holiday and I've been invited to a beach party with dozens of people including locals and ex-pats.

I'm told the menu will include grilled red snapper, prawns, tuna and a few other fish. My friends are making a huge salad-- the vegetables and fruits here are luscious and inexpensive-- with about a dozen ingredients. There will also be fried plantains, French fries and baked sweet potatoes. The dessert will be all fruit including pineapple, papaya, mango, grapes and probably more.

It's 84º F and partly cloudy but it's supposed to clear a bit later. This should be a fun evening!

Chocolate pudding before bedtime.
