mango lassi recipe:
Mangoes are plentiful and cheap right now; the small yellow Manila mangoes are especially delicious. When it's hot (and even when it's not), a mango lassi is a heavenly treat.
Mango Lassi for one:
1/2 cup mango chunks (one Manila mango)
1/2 cup plain yogurt
1/2 cup milk and/or water--use more if your lassi is too thick
1 teaspoon lemon juice
2 teaspoons sugar
Put it all in the blender and blend away. Some people add cardamom, and some add ice.

It’s been a loooong time since I’ve had mangoes. I like to just whiz them in the blender with a little lemon juice (to prevent browning) and pour over a sheet (or four) in the dehydrator to make fruit roll-ups. Same with strawberries and peaches. I’d forgotten these treats since the kids are too old to demand them, so will have to stock up this weekend.
