What's for Dinner, Fri., July 11, 2025

Spicy Basil Eggplant With Dates and Cashews.

It has garlic, ginger, and orange pepper. A whole cup of basil! I have dates my friend brought me from his recent trip to Dubai, so I'm excited about using them.

I guess you can't call it a salad, but a vegetarian or vegan entree? Will serve it with couscous or quinoa.

Pomegranate kombucha.

Dessert: a couple truffles and chilled decaf.

Fresh green beans cooked with bacon, onions, and tomatoes. Sauteed okra. Sliced tomatoes and cukes. Corn on the cob. Cornbread.

We went to the Butcher Brothers today and scored a beautiful full rack of pork ribs. They are slow cooking on the grill and I’ll put Stubb’s barbecue sauce on them when served. Corn on the cob and cole slaw. Iced tea.

Steam-fried in evoo and veggie broth: chopped onions, red bell pepper, shallots, sliced carrots, broccoli florets, sliced mushrooms and minced garlic. When done I added cooked black beans, a dollop of vegan butter, chopped parsley, oregano and basil from my garden and tossed the veggies in a mixture of brown rice and red quinoa. Cheers!🥂
