What's for Dinner, Tues., July 15, 2025

Pumpkin risotto that my friend made for me.

Sorry this is late--coming home from the union meeting, everywhere I turned streets were closed off for repairs from the flooding.

I had to go 30" out of my way just to get home!

I do hope your aches and pains are muscle aches and bruises, and that the hurting eases up. Just watch for tomorrow! Plan to take it extra easy on yourself. I've found with me, the day after is worse than the day I fall! This last one, I somehow broke my little toe. It still hasn't eased, but you can't exactly put a cast on your little toe! (LOL)

Lentils cooked in veggie broth, tomato paste, minced onion and garlic. Added spices of chili powder, cumin, garlic powder, oregano, chipotle powder and cayenne. When the lentils were soft and have absorbed all the liquid I stirred in some fresh steamed corn. Also made steamed cabbage and mushrooms and air fried seasoned red potato nuggets as sides. Cheers! 🥂

New for me, anyway.

DUer just a progressive posted this technique yesterday and I tried it last night.

https://www.democraticunderground.com/?com=view_post&forum=1157&pid=151356

The meat turned out deliciously! Basically, the meat is cooked first in the oven then pan-seared at the end. The meat was cooked perfectly and it was juicy and tender.

While I still prefer grilling, this technique will be in our arsenal for bad weather indoor cooking.

Thanks, justaprogressive!
