What's for Dinner, Thurs., Aug. 21, 2025

Mollie Katzen has this recipe for stuffed zucchini: she calls it Zuccanoes. I've linked her quirky handprinted recipe that I'm making with homegrown garlic, onion, chopped almonds, and Swiss cheese. I'm using quinoa instead of rice.

This recipe is a great use of garden herbs, of which I have basil, parsley, and sage, already washed.

She recommends vegetable puree topping but I'm just going to use creamy tomato sauce.

Strawberry lemonade kombucha.

Dessert: plum.

had polish sausage, green beans, and yellow squash. Salad or cantaloupe before bedtime.

2. A rare effort

I made a huge batch of chickwheat (looks and tastes like chicken but made with the protein from wheat) last weekend, and tonight I struggled to figure out something I haven’t had in a while… Then it hit me—quesadilla! WW tortillas with refried beans, spicy chickwheat, tons of pickled jalapeños, and some dairy-free cheddar, toasted on the old comal.

Why haven’t I made these for so long?! So good that I wolfed it down before I could snap a pic.

Tomorrow, the last of the spicy chickwheat is going in a salad with carrots, celery, apple, pecans, and some raspberry-walnut vinaigrette for lunch.

3. Beyond Sausage, Peppers and Onion

While I air-fried a couple Beyond Italian Sausages, I steam-fried in evoo and veggie broth: 3 chopped green peppers, chopped large onion and minced garlic. When almost done I added sliced mushrooms, sliced zucchini and seasonings of dried oregano, basil, red pepper flakes and fresh chopped parsley. After the sausages were done I thinly sliced them and added them to the vegetables. I mixed in some leftover brown rice at the last minute. Homemade vegan parmesan on top. We also had an ear if microwaved sweet corn as a side. Cheers!🥂
