Papaya-Mango Yellow Rice
Prep time 10 mins
Cook time 10 mins
Total time 20 mins
A quick stir-fried rice recipe that uses green papaya, mango, turmeric and a
tadka of simple spices and nuts to make a one-pot meal that is ready in
under 10 minutes. Great to pack in lunchboxes as well.
Author: Anjana Devasahayam
Cuisine: India
Serves: 3-4
You will need:
Oil - 2 tsp
Mustard seeds - ½ tsp
Cumin seeds - ½ tsp
Dried red chilies - 2
Curry leaves - 5-6
Ginger - 1 tbsp, finely chopped
Asafoetida - a pinch
Turmeric powder - ½ tsp
Green or unripe papaya - ½ cup, grated
Green or unripe mango - ½ cup, grated
Coconut - 2 tbsp, grated
Rice - 3 cups, cooked
Salt - to taste
Roasted peanuts - ¼ cup
How to:
Heat oil in a large skillet. Add mustard seeds, cumin seeds, dried
red chilies and curry leaves. When the seeds begin to crackle,
add ginger, asafoetida and turmeric powder. Saute for a few
seconds on low flame to fry the ginger.
Add grated papaya and mango and cook for 3-4 minutes, stirring
frequently. When papaya and mango are soft, tip in the coconut and
saute for a few more seconds.
Now add the cooked rice and gently fold in to combine. Season
with salt. Add the roasted peanuts. Serve hot with a side of raita,
pickle and pappads.
Notes:
1. Though filled with nutritional goodness, unripe green papaya is
somewhat bland, but still great at absorbing flavors. So green
mango is added here to give the rice a tangy flavor.
Add a spoonful of spicy Indian pickle (achar) and poppadoms
and you are set for a simple but great meal!

Roasted Papaya with Honey and Spices

Preheating the Oven
To begin, preheat your oven to 180°C. This will ensure the papaya cooks evenly.
Make sure the oven is fully heated before adding the fruit. This ensures the
flavors are concentrated and the roasted papaya achieves a tender texture.
Preparation of Papaya
Next, take a beautiful papaya. Cut it in half and remove the black seeds inside.
Once the seeds are removed, brush the flesh generously with honey. This will
add a natural sweetness to your dish. To enhance the tropical flavors, sprinkle
the papaya cinnamon and nutmeg. These spices will bring a warm and fragrant
note to your dessert.
Cooking and Serving
Finally, place the papaya halves on a baking sheet and bake for 25 to 30 minutes.
Check for doneness: the flesh should be tender and slightly caramelized. Once
cooked, serve the papaya warm with a scoop of vanilla ice cream. This
combination creates a delicious and comforting dessert, perfect for winter evenings.

(1,970 posts)1. That sounds delicious.
It confused me a bit though, because I had never heard of papaya being called paw paws. As far as I know, this
https://en.m.wikipedia.org/wiki/Asimina
is a paw paw. However, wikipedia does note that papayas are sometimes called paw paws.
