I'm making my own chicken nuggets from chicken breast tenders. I have them soaking in buttermilk now, but later I will cut them and season them using the various seasonings from my Voyager collection of blends.
Then I will dip them in egg and cornflakes and saute or air fry them.
I have one basic sauce I'm making from which I can make variations.
This is Chef Dennis Littley's sauce which combines mayo, ketchup garlic, onion, S&P, Worcestershire sauce, and a few drops of sriracha.
From this, I can make BBQ, honey mustard, chipotle, or some type of herb combo, like with thyme or basil.
This is so much work I prob'ly won't have anything else with it. Maybe rinse off a few lettuce leaves and call it a salad.
I already spent two hours in the kitchen with kombucha. I'm having blueberry ginger tonight.
Dessert: the other half of my miniature bundt cake with lemon berry glaze. This is what the cake looks like, and you can get them at Aldi with several flavors of glaze:

(90 posts)Zoodles, meatballs and sauce. Also too many tomatoes so I used 2 kilos to make sauce.
Oh yeah and caprese salad, basil could use a trim.
So it is clean up the garden day!

(1,533 posts)After a long drive to Syracuse we wanted something fast. Chipotles sofrito (seasoned shredded tofu) is really tasty and provided the protein on the salad of chopped romaine, grilled peppers and onions, black beans, corn, pico de gallo, a dollop of guacamole and hot sauce. Cheers! 🥂
