Salad with mixed greens.
Spotted the most incredibly fresh heads of red leaf lettuce at the store this a.m. and lost all control. I already have green ruffly! Boston! (hydroponic), too! Bibb.
I bought it anyway, and spent over an hour making a salad with cucumbers, celery, green pepper, tomatoes, scallion, basil leaves, Jarlsburg cheese cut in cubes, chicken tenders, sprinkled with an herb mix and sauteed in butter. I also added blue cheese stuffed olives. Toasted pepitas to sprinkle on the top.
To go with it, toasted blueberry scones.
Cherry kombucha.
Dessert: Plum cooked in air fryer with goat cheese and honey-thyme drizzle.

I made the gazpacho from scratch, the shrimp burgers are from Trader Joe's - I'll pan fry those, and serve them on buns.

(21,580 posts)My daughter gave me some corn on the cob she cooked yesterday. I cut it off the cob and fried it with fresh sweet pepper and sweet onion, in butter and olive oil. My Mom used to make it that way for use and it is so good
My grand daughter made some no bake cookies after I dropped her off. She wanted me to hang around so she could send some home with me. They are really good

(1,531 posts)In a large mixing bowl I tossed in a small amount of evoo: sweet potatoes cut into cubes, chopped onion, sliced celery, chopped green pepper, minced shallots and garlic, sliced mushrooms and canned chickpeas. I added seasonings of dried oregano, chopped fresh parsley and chives. Transfer to a large baking pan sprayed with evoo and bake for 70 minutes at 400 degrees. Squeeze on fresh lemon juice before serving. Cheers!🥂

(15,695 posts)I had a huge pallet of chicken legs I made in the crockpot a coupple days ago, so it's turning out some nice meal options with canned staples...
Used canned white cannelini beans, corn, green chiles... had some celery and zuchini to slip in there... and some onion and half a yellow pepper. Seasoned with cumin, oregano etc. then a couple Tbsp of black bean salsa for fun and a half a roma tomato to use it up. adding a tsp or so of sugar to cut the spice and acid.
That's one of the things I love about chili - it can use almost anything!
Making a big pot of rice and we have tortillas and shredded chese too...
My son is staying with me for a week so it's nice to have someone to "cook for' for a change!
