What's for Dinner, Fri., Aug. 29, 2025

I think I'll make zuccanoes again. I have two zucchini I'd like to use. This time I'll put in some type of protein, like chopped shrimp or ground chicken. Using Monterey Jack for the cheese.

I tried La Coliniere's technique for cooking vegetables this morning. I cooked baby bok choy. La Coliniere has a thread on it and he tells how to do the technique. I think it's a very flavorful way to get the vegetable juices to work for you in the dish you're preparing. He calls it "steam frying."

I used beef stock because that is what I could find in my freezer. I have many other stocks I've made, so I'll have plenty to work with when I do this again. He tells you in the instructions to have water or stock at the ready, and I found that to be the case. But wow! Did it ever pay off when I finished the dish, which was nothing more than baby bok choy with garlic, ginger, and sesame oil. Terrific contribution, La Coliniere.

Kombucha: ginger.

Dessert: cantaloupe.

Buttermilk biscuits

No dessert but old fashioned hot cocoa later by the wood stove

Hmm ever had baked spaghetti? If you cut up the chop(s) all those ingredients
would cook well in a closed casserole. Cheese in it, or sprinkled after.

We found out one of our local pizzerias now has vegan cheese so we couldn’t resist trying their pie. Great! The place we usually get pizza from is a 20 minute drive and this new place is 2 blocks away. Turns out it’s Detroit style pizza which means it has a thicker crust baked in these crazy high sided rectangular baking pans. The pizza was very good, different from Buffalo style, but I felt it was a little underbaked. Next time I’ll request it be slightly over baked. Cheers!🥂

I stuffed some peppers with Swiss cheese and roasted them. The peppers are so hot that one was all I could eat. I baked a loaf of bread this morning and ate 2 slices to cool my mouth. I have a lot of onions, so I tried a crispy baked onion and cheese recipe I saw on facebook reels. I was out earlier and treated myself to a rotisserie chicken. My daughter gave me a bottle of Bulgogi bbq sauce, and I used some of it when I heated up some chicken.

I got my first shipment from Misfit Market. One of my friends signed up for it, and she really likes it. There is an ample variety of choices, and you can get what you want, but unfortunately, the prices are higher than what I pay locally. I've already decided I will drop out after my 3rd order. There are a lot of organic, plant-based, and g-f items to pick from, fresh meat, vegetables and fruit, pantry items and bakery. I had both of my daughters look at the website, as they both usually buy organic, plant-based or g-f products and they both said the Misfit prices are the same or higher as what they buy in their areas.

In my first order, I got fresh figs, which I haven't had since I visited Brazil in 1997. I had a couple of those. My daughter was here, so I gave her the plant based yogurt and shredded Mozzarella I ordered.

I ate, but it was spread out over the afternoon. I will probably graze all weekend

Advocates grazing. She says it evens out blood sugar spikes.

Very interesting on the misfit market. I’ve been tempted to try it but I have such good local options that it would be hard to beat.
