What's for Dinner, Wed., Sept. 10, 2025

Gochujang Sesame Noodles with Broccolini.

Udon noodles, soy, rice vinegar, tahini, sesame oil, garlic and scallions. Basil leaves and sesame seed for the top.

Watermelon feta cheese salad with baby arugula.

Kombucha: blueberry ginger.

Dessert: carrot cake with cream cheese, topped with walnuts. Also an agave swirl on top.

Not enough for two though, so I'm going to make a Caesar salad and steam a couple frozen pork bao. We have ice cream for dessert.

Decided to actually cook tonight and heated up Gardein turkey cutlets and gravy with mashed tatties... and now that I've finished, I realized I forgot to steam an ear of corn, which was the whole point of exerting myself!

I may need to get back in the kitchen and make that my dessert. Derp! 🤪

The cutlets were an impulse buy as they were on clearance for $2.59 (for four vegan breaded cutlets and a small pouch of gravy), and they were pretty good, though I'll make more gravy for the next meal.

7. Veggie Quesadillas

We had a late dinner at a new Mexican restaurant that opened near us. I had a quesadilla stuffed with grilled onions, green and red peppers, tomatoes, broccoli and mushrooms. I topped it with fresh guacamole, pico de gallo and hot sauce. Also had side of refried beans made without lard. My wife had the same meal except I had a nice cold draft to wash it down. Salud!🍻

Served with black beans with garlic and cumin, plus a packet of Sazon Goya seasoning (that stuff is SO good). Also served buttered corn.

She has a recipe for Tomato Feta soup that I was searching for. Trader Joe's makes this soup and it is so good. I had to laugh at her description of what led her to make her own:

Over the past year, our family has developed a small — okay, major — obsession with Trader Joe’s tomato feta soup. ♡

As in, there has literally been a corner in our fridge reserved specifically for those cute little tubs which we’ve hoarded purchased nonstop so that we never accidentally run out. And dozens upon dozens of bowls of tomato feta soup later, we still somehow never grow tired of this one!


I was happy to find her recipe. She put quite a bit into testing it out and I found she recommended ingredients I wouldn't have thought of.

I read through her recipe for the chicken enchiladas and it sounds delicious. I would try that recipe in a heartbeat.

I’ll have to try the tomato feta soup; sounds delicious! Re the chicken enchiladas, I leave out the beans and cook separately. And I bake boneless, skinless chicken breasts, then cut up and add to the onion/chile mixture. Just personal preference. Ali also has an easy fried rice recipe that I really like:

B/S chicken thights and veggies (zucchini, eggplant, carrots, mushrooms, red bell peppers and onions in a store-bought "mango curry" simmer sauce. Served over brown rice.

I didn't make dessert.
