Cooking On Pennies IV: From "Bravo! 365 Yummy Budget Recipes" by Sage Salas 🌞


Absolutely Delicious Green Bean Casserole From Scratch

Ingredients

2 (12 ounce) packages frozen French cut green beans
8 ounces crimini mushrooms, quartered
3 tablespoons butter
1 small onion, halved and thinly sliced
1 tablespoon chopped fresh parsley
2 tablespoons all-purpose flour
1/2 teaspoon lemon zest
1/2 teaspoon salt
1 pinch ground black pepper
1/2 cup milk
1 cup sour cream
1/2 cup shredded Cheddar cheese
1 (2.8 ounce) can canned French fried onions

Direction

Start preheating the oven to 350 ° F (175 ° C).

In a saucepan, put green beans and add approximately 1/2-in. of
water. Boil it and steam for 5 minutes until the beans are soft
but remain vibrantly green. Strain and stir with mushrooms. Put
aside.

In a big frying pan, heat butter over medium heat. Add parsley
and onion, stir and cook until the onion is soft. Mix in flour until
combined, and then stir in pepper, salt, and lemon zest. Slowly
stir in milk, whisking continually to prevent forming lumps and
then mix in sour cream. Heat to medium heat until the sauces
tarts to bubble. Add the mushrooms and green beans, whisking
to blend.

Take away from the heat and lightly stir with some of the
French fried onions and Cheddar cheese, reserving some of each
to sprinkle on the top. Spoon into a 1 1/2-qt. casserole dish and
put the saved cheese and onions on top.

Put in the preheated oven and bake for 15 minutes until the
cheese has melted

Baked Chili Hot Dogs

Ingredients

6 hot dogs
6 split hot dog buns
1 (15 ounce) can HORMEL ® Chili With Beans
1 cup shredded Cheddar cheese

Direction

Heat the oven to 350 ° F. Coat the baking dish (about 9x13 ” )
with cooking spray.

Heat the hot dogs following the package instructions. Place the
hot dog buns, cut side facing up, in the baking dish. Put the hot
dogs into the buns. Add chili over top. Sprinkle cheese over.

Tent the pan with foil.

Bake until cheese melts and the buns are hot, about 15-20 mins.

Baked Tomato Slices

Ingredients

olive oil, divided, or as needed
1 large tomato, cut into 1/2-inch-thick slices
1 sprig fresh rosemary, leaves stripped and finely chopped
1 clove garlic, minced
salt and ground black pepper to taste

Direction

Set the oven to 175 ° C or 350 ° F to preheat and coat 1 tbsp.
olive oil to the baking sheet.

Place on the baking sheet with tomato slices, then sprinkle over
tomatoes with garlic and rosemary. Brush with leftover olive oil
and season them with pepper and salt.

In the preheated oven, bake for 5-10 minutes, until tomatoes are
softened.

Balsamic Glazed Brussels Sprouts

Ingredients


1 (16 ounce) package fresh Brussels sprouts
1 small red onion, thinly sliced
5 tablespoons olive oil, divided
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 shallot, chopped
1/4 cup balsamic vinegar
1 tablespoon chopped fresh rosemary

Direction

Preheat the oven to 425 ° F (220 ° C). Start by greasing the
baking sheet lightly.

In a bowl, mix the onion and Brussels sprouts together. Insert
the pepper, salt and 3 tablespoons of olive oil, tossing gently
until coated. On the prepped baking sheet, distribute the sprout
mixture on top.

Put into the preheated oven, baking for 25 to 30 minutes until
the onions and sprouts start caramelizing and tenderizing.

In a small skillet, pour in remaining 2 tablespoons of olive oil
and warm it up at a moderately high level of heat. Add the
shallot, saut é ing for around 5 minutes until it softens. Pour in
the balsamic vinegar, cooking for around 5 minutes until the
glaze starts reducing a little. Add rosemary, stirring into the
glaze and pouring this atop the sprouts mixture.
