What's for Dinner, Mon., Sept. 29, 2025

Chicken marinated in cilantro pesto, some in basil pesto. Grilled and served over buccatini.

Ginger kombucha.

Tossed green salad with toasted pumpkin seeds and sesame dressing.

Dessert: Blackberries in whipped cream, served over shortbread.

2. Rock 'n' Roll chicken

In a roasting pan, put chicken leg quarters along with chopped onions, baby carrots, sliced mushrooms, red potatoes quartered, minced garlic, thyme, red wine, salt & pepper, parsley, chicken stock and a bay leaf. Cook covered in a 325-degree oven. Served with bread and butter and Chardonnay.

(Basically coq au vin!)

Sorry I just returned from grocery store, and not returning there for a while. BOOKMARKING your recipe!!!

SADLY red potatoes are only available in plastic bags (in numbers too large for me gonna share with daughter. Medium reds have been my fsvorite for years.

5. Kung Pao, with chicken and vegetables

Not exactly authentic, as Kung Pao Chicken is a meat dish and should have a second vegetable dish to accompany it. But I have green onions, wayyy too much cauliflower (from the Farmer's Market) and a lot of carrot, and only one wok. I'm feeling lazy. Of course, I'm including peanuts as well.

It's also not authentic because it's in the style of a half-storefront restaurant that was across from DH's workplace at the time. As near as I can figure, the cook was from Northern China and reversed the proportions of hoisin and brown bean sauce. It's a bit sweeter than the usual, but still spicy. It's really good.

Peach gingerbread for dessert.

These potatoes are huge, almost the length of my forearm? Topped with grilled chicken, sauteed green peppers, onions, & a yummy white cheese sauce that is soooo good!

Will enjoy the other half for dinner.

Steam-fried in evoo and veggie broth: chopped onions, red bell pepper, minced garlic and ginger. When almost done I added sliced Asian eggplant and continued cooking until done. Air-fried tofu cubes and Patak’s Jalfrezi curry sauce were added and the dish simmerd for a couple more minutes. Served over brown basmati rice with chopped scallions on top. Cheers!🥂

K had a craving for fried okra so she's getting something from somebody's "rib shack." She's doing chemotherapy so she gets whatever she wants to eat.
