Baby arugula salad with cherry tomatoes, toasted almonds, and homemade vinaigrette.
An easy dinner--a few flounder filets sauteed in butter, garlic, and thyme.
Kombucha: apple cider.
Dessert: caramel apple with peanuts. I think this may be my favorite fall dessert.

(909 posts)On the side, chickpeas in palak sauce, the same as used in butter chicken. There'll be enough sauce to spare some for the chicken. Also salad, and I may break out a jar of beets. I don't think I'll need rice.
Obviously, this is going to be one of the repeats for the week, reheated on a late night. The other is going to be a 2-night amount of French Onion Soup, made later in the week. With salad.
So, four nights are accounted for. The last 2 nights are burgers, and Hungarian goulash with noodles, both with salad. On the 7th night, we go to a restaurant, even if it's fast food.
Everything's in the fridge or pantry already. The lettuce will be a little tired by the end, but still usable.

I had the seafood platter, fried frog legs, scallops, cod, and butterfly shrimp. Salad with poppy seed dressing, dinner rolls, and bowl of creamy broccoli soup.
I couldn't eat it all. I have enough leftovers for a late snack.

Rest seems to do the best for me, followed up by Coricidin. I've been sleeping a lot, like going to bed at 11 and getting up at noon the next day. Thanks for asking.

(1,595 posts)Using up the last of my late crop of green beans that grow on my back fence. Steam-fried in evoo and veggie broth: chopped onion, red cubano peppers, sliced mushrooms, cut green beans and minced garlic. I added red pepper flakes, crispy tofu, and cooked chickpea pasta. After plating the dish was topped with my homemade vegan parm. Cheers!🥂

(722 posts)I made country sausage gravy. I used sage pork sausage, 4 tbsp butter, 5 tbsp flour, and about 2 3/4 cups 2% milk. A bit of sea salt & freshly ground pepper, a dash of cayenne and it was quite good. Served it over buttered toast and topped with fried eggs.
I don't know why I was so worried I'd get it wrong.
