What's for Dinner, Tues., Oct. 7, 2025

Appetizer: chicken liver and raw onion on a couple wheat crackers.

Entree: Tortellini soup--tomato feta with fresh dill from garden.

Side: Stir fry broccoli rabe with garlic and olive oil.

Drink: Cider and cherry flavored kombucha.

Dessert: Haven't decided if I will even have any.

I hit the freebie jackpot today. At the library they had cleaned out their cookbook section and were letting people take the discarded cookbooks for free. I picked up six with the intention of returning three to the pile, but I was not able to do that after I sat at a table, looking them over. I'll try them and probably return three to the freebie section.

We had a large lunch with a friend so dinner isn’t necessary. Since it’s movie night, the menu will include popcorn, nachos and Seven-Up.

6. Sweet Potato Veggie Bake

In a lg mixing bowl I added chopped celery, red bell pepper, leeks, sliced red onion, cauliflower florets sweet potatoes cut into cubes, a can of drained chickpeas and minced garlic. I added a small amount of evoo, dried oregano, garlic powder, chopped parsley and cayenne pepper. I tossed it all together and baked it in a large pan at 400 degrees for about 70 minutes. Fresh lemon squeezed on top when done. Cheers!🥂

Yup, beef prices are way up. Ground lamb and pork haven't risen quite as much, so the meatloaf is made with equal parts ground pork, beef, and lamb (although the pork was more equal than the others), finely chopped onions, carrots, and celery, egg, and bread crumbs.

Lunch tomorrow will be meatloaf sandwiches, as will lunch the next day, and the next
