What's for Dinner, Mon., Dec. 8, 2025

Cherry tomato, basil, and Persian cucumber salad with Balsamic vinegar.

Half a spaghetti squash a la' Marthe', with feta cheese, garlic, basil pesto, chopped tomatoes and Parmesan.

Herb-garlic tuna steak.

Kombucha: Mandarin passionfruit.

Dessert: Tapioca banana pudding. Hot Earl Grey with lavender added.

p.s. I learned about the lavender from a woman I met at my Indivisible socializer last night. It was a chance to listen to live music, they had a buffet, and I met several interesting people. The woman who told me about the lavender is an equine therapist and she used to work at the horse farm just down the street from my house!

It says on the bag 15 beans with flavor packet . Some chopped onion and some ham shreds from the freezer were added.

Cornbread is in the oven.

I made chili yesterday and had chili again for lunch, but darned if fresh cornbread might make it easier to face another bowl of chili tonight (and hopefully, we’ll finish it off!)

Spooned over a slab of cornbread. It is actually better that way if the cornbread is a bit stale.

I’ve gone the lazy route and just scooped it up with tortilla chips last night, so the extra effort of making bread will be worth it and will feel like less of a repeat.

I have a little bit of hamburger crumbles to add to the sauce. The sauce I'll start out with is store bought, but I don't think its great... way too runny, so I'll add my own combo of tomatoes, tomato paste, and herbs to it. Top it off with some parmesan I have in the frig. It's two days before the check gets here, so we're on low rations for now and trying to stretch stuff out...

Thickly cut bone-in pork chops are marinating in olive oil, lime juice and salt & pepper. I’m going to broil them.

Yellow rice and spicy fried broccoli florets. Lemonade.

Apple slices for dessert.

Bluegill were caught from my pond last summer. I have an overpopulated bluegill population. I need more largemouth bass to get the fish back in balance. Trouble is, I need bass six to eight inches long or they get eaten by the catfish. I use Fry Krisp batter mix.

I plan a salad before bedtime.

TOMORROW, may have roasted salmon with Dijon-Honey Sauce. Salmon roasted in a garlicky olive oil marinade until tender. & Winter Vegetables, roasted carrots, parsnips, brussels sprouts, cauliflower, and red onion may finish it off.
