What's for Dinner, Fri., Jan. 2, 2025

Zesty Lemon Pepper Chickpea Salad. Veggies like yellow bell pepper, cucumber, red onion, scallions, avocado, and cherry tomatoes. The lemon-pepper chickpeas have seasonings of smoked paprika, oregano, dill, & cayenne. Feta cheese, parsley.

I'm doing the chickpeas in the pressure cooker.

The recipe has a lemon-olive oil vinaigrette to go with it; add red pepper flakes.

A few curry chicken meatballs from last night. I finished this recipe so late that I only was able to taste a couple so far.

Kombucha: Mango.

Dessert: Maybe banana pudding.

Pretty easy on nights I don't feel like cooking and a good companion to soup, too.

this sounds yummy and fairly easy, too.

Notice how much I'm mentioning "easy"? I'm desperate for easy these days.

I put the rest of the chicken, bones& meat into the crockpot& I'll add a shot glass of ACV to dissolve the bones for a thicker stock for the ice cube tray in the freezer. Always useful to have on hand.

Ms K found a fresh, never frozen turkey breast after Christmas on sale for $2.69. Not per pound, just $2.69. It's in the oven!

8. Sausages and peppers

Spicy sausages (chorizos) and fresh red, green and yellow peppers along with yellow onions fried up. Served with fresh rolls, brown mustard and a tomato and cucumber salad topped with olive oil, Balsamic vinegar and fresh dill.

We are both still testing positive for Covid ( day 5). We’re feeling somewhat better with our fevers gone but we still have bad head colds. I heated up TJ’s lentil soup with ancient grains and made Tofurky ham sandwiches on whole grain bread with lettuce, tomato, vegan mayo and mustard. Cheers!🥂
