What's for Dinner, Sun., Mar. 8, 2026

Pear & watercress salad with Brie. Toasted almonds on top.

Eggplant almond enchilada using a spinach wrap. Mollie Katzen recipe, my fave.

Ginger soda.

Dessert: Apple strudel with mascarpone. Decaf coffee.

2. Cheerios

I'd had a grilled ham and cheese for breakfast, a turkey sandwich, stuffing and gravy for lunch plus several snacks so I decided to have breakfast for dinner.

Cheerios with strawberries, banana and almond milk was my dinner.

Ducky crunched a few Cheerios but not with the gusto he applies to shredded wheat.

TJ has left for work so the pup and I are on our own tonight. There might be a squeaky toy or ball for entertainment.

Air-fried TJ’s falafels folded up in lavash flat bread with sliced tomatoes, red onion, pickled beets, romaine leaves, walnut-balsamic dressing and tahini. Cheers!🥂
