Szechuan Ginger Wrap from my Wrap it Up cookbook by Amy Cotler. I always note/rate the recipe in my cookbook, and I see I last made this in 2013. It has scallions and yellow bell pepper, a little sriracha mixed into the hoisin sauce, and finely chopped Napa. It's going on a spinach wrap. Top with cilantro before rolling up the wrap.
A red tip lettuce salad with cherry tomatoes, red onion, green pepper, and cucumber. Toasted pumpkin seeds. Caesar dressing.
Kombucha: unflavored
Dessert: Klondike vanilla bar.

Amy's cookbook:

I bought a tenderloin to bring to our friends home in the mountains near Boquette. Its been marinating since last night so itll be ready for their grill. Were also grilling some potatoes and asparagus. Our hostess has homemade mango gelato for dessert.
Its much cooler in Panamas mountains than at the beach!

Salad or popcorn, for later this evening.

(1,895 posts)Steam-fried in evoo and veggie broth: chopped onion, yellow bell pepper, sliced carrots, sliced mushrooms and minced garlic. When done I added trimmed snap peas and when they were done I added air-fried tofu, cooked protein infused penne and vegan butter. Crumbled Morning Star bacon on top after plating. Cheers!🥂
