What's for Dinner, Fri., Mar. 2026

Beyond burger w/Cheddar cheese, raw onion, turkey bacon, avocado, tomato on whole wheat English muffin.

Sweet potato fries and ketchup.

Pickles.

Kombucha, unflavored.

Not sure about dessert.

Hope I can find the Aldi wild caught shrimp LaColinaire mentioned the other day. I am writing this from the Aldi parking lot.

The wild caught Aldi salmon appears to have been switched out for farmed fish, so be careful with the shrimp.

Will likely finish my Margarita potato I had for lunch.

Leftovers from Tuesday

Ducky watched me eat with concern that I wouldn't save him any. His silent concern earned him my plate with some bits of meat and buttery potato. He ate and licked it clean. He came back to give an additional licking after a few minutes. Just to be sure.

4. Spicy Red Lentil Soup

Weather taking a turn for the worse so I thought it was a good day to make soup. Besides the red lentils the soup ingredients were veggie broth, chopped onion, celery, carrots, cabbage, yellow bell pepper, sliced mushrooms, snow peas, minced garlic, red pepper flakes, toasted cumin seeds, and chopped parsley. Also had toasted baguette slices. Cheers! 🥂

Son talked me into Beyond burgers last night at Publix—mostly because he’d also insisted we needed buns (some massive, dark ones also on sale via Publix’s treacherously irresistible BOGO deals...), so that’s on deck for us tonight, as well. I think he’s planning on spicy sweet relish (with jalapeños?) sweet potato waffle fries (in the air fryer), and mixed veg to make it all less reprehensible.

Doubt there’ll be room for dessert after all this—those buns are HUGE!

As long as I don’t have to cook, I’m happy.
