What's for Dinner, Wed., April 1, 2026

Big pot of vegetable beef soup. I had a fun time walking the gardens and picking emerging herbs, garlic, onions, and celery. I had frozen vegetable stock in the freezer. Creamer potatoes in various colors, cubed rutabaga, carrots, onion. I'll add canned tomatoes and tomato paste later. The herbs were oregano, sage, parsley, thyme, and I added dried bay leaf from my dried herb selection. Better Than Bouillon is always a must for a flavorful soup.

I also thawed artisan rolls, from which I will make croutons and also possibly some open face sandwiches with melted cheese and peppers.

Another addition to my kitchen tasks is baking corn bread: I want to try a new type of infused honey with it.

~ Meatloaf
~ Mashed potatoes, skins on
~Baked acorn squash with a drizzle of Vermont maple syrup
~ Side dish of tomatoes and feta with balsamic dressing, basil and oregano
~ Lemon water
~ Maybe a Swedish orange cookie or two later

I love acorn squash but rarely see it mentioned compared to other squash varieties. So nice to see it here. 😃

Steam-fried in evoo and veggie broth: chopped onion, orange bell pepper, celery, chiote squash, cabbage, mushrooms and minced garlic. When almost done I added more stock, canned kidney and pinto beans, sweet corn, canned petite tomatoes, tomato paste and spices of chili powder, cumin, oregano, chipotle powder, and red pepper flakes. Salud!🥂

Tonight was our annual Rural Co-Op Electric meeting for shareholders. We had a buffet bar where we filled our own plates with deep fried cod, roast beef, pork loin, corn, green beans, scalloped potatoes, and their famous beef house dinner rolls. After eating, they gave everyone a small bowl of butter pecan ice cream.

Now I’m going to be fixated on fresh cornbread until I can make some… It’s almost 10 now and I’d never make it tonight.

Gonna finish my Arizona and eat a fistfull of strawberries and call it good.
