I made a salad with hard boiled egg added to the bagged salad mix.

Cold cucumber & mint water to drink.

Burgers in the skillet. They are made from ground chuck and brisket.
Some leftover corn on the cob to warm up.

TJ will be working tonight maybe she'll to take one to work.

I hope your power comes on soon. We had an 8 plus hour outage a while back when I had a ham in the oven. I had to throw it out.

Edit: Ducky got up as the burgers were cooking and proceeded to patrol the house. When the burgers were ready he observed my first bite. Then he twirled like a ballerina. It's the first time he did this without being asked.

Hearing ‘corn on the cob’ kinda lit me up a bit. I’ll stop at the market on my walk home. Thanks for the idea. 🤓

Whew!

Later tonight I will have a salad. Now I don't have to go to the store, yay!

I think the salad will be red leaf lettuce (from store), oak leaf and romaine from my garden, with hot honey goat cheese medallions, lightly toasted. Chopped peppers, red, gold, and orange, tomatoes, and English cucumber.

Toasted corn muffin half to go with.

But first, during daylight hours, more gardening.

A friend suggested an idea for Portobello mushrooms and the Landlady expanded on it.

Take small-to-medium Portobello mushrooms, clean and wash then pat dry. Marinate in a mild soy sauce/olive oil mix. Meanwhile steam fresh spinach and stuff it into the ‘shrooms. Put them on the grill for five minutes then top them with mozzarella cheese and grill covered till the cheese has melted.

In the meantime, I grilled a lovely beef filet and the timing was tricky but everything came together.

NJCher, I hope you got your power back!

6. White Bean Falafel Wraps

Made falafel balls from scratch using mashed navy beans instead of chickpeas and baked in the oven. Lavash flat bread slathered with TJs creamy dill dressing, then loaded with falafels, whole romaine leaves, sliced red onion, picked beets, and a good dose of tahini before rolling up tightly. Cheers!🥂
