Rinse them, cut them in six, put them in the dehydrator for 24 hours. They're wonderful!

If you are willing to sacrifice a cookie sheet, then roast figs until they are hard. You will have leaked caramelized goo hardened on the pan and near impossible to clean. However, the not quite charcoal figs will have transformed into something amazing. And when ground and blended with coffee you will have amazing flavors that you would never have expected from figs.

Next time I make this I think I will try to put water in the glazed cookie sheet, after I have pried of the hardened figs. Then I will put that in the oven and see if I can make a syrup by slow cooking the residue on the pan.

I'd love to have some grilled Mission figs with thinly sliced almonds and chevre cheese at the old Liberty Bar again. https://www.liberty-bar.com/menu
