2. A lot of those processed tomato products are made with mechanically harvested tomatoes.

People who have driven north and south on I-5 or Hwy-99 in CA will probably have seen lots of trucks hauling tomatoes in (usually two) open top trailers. Those are the mechanically harvested ones.

There still is some labor involved, of course, just not as much as in the past.
