Dehydrated tomatoes. Going to have to give some background.

Every year in our compost pile, tomato plants volunteer to offer us a small bounty of whatever kind of tomato they want. The greenhouse is right next door to the pile so my wife has no problem hitting it with her unwanted tomatoes from the plants. I now save the seeds from the compost tomatoes to start in the spring.

Couple years ago we had a ton of volunteers and lots of tomatoes that were on the cherry tomato size. We had a ton of Roma’s coming in and I started dehydrating the volunteers trying to make tomato powder. Didn’t feel right not to do anything with ‘em. Packed them up in Mason jars, made a rice bag for desiccant and put them away. They tasted like tomato candy but I was in a lurch trying to figure out how to use them in cooking…the powder idea didn’t work. They were like leather and the grinder wouldn’t break them up.

Dehydrated tomatoes from a quart mason jar on a quarter sheet. Most if these slices are about the size of a quarter.






Later in the season while processing the Roma’s into sauce which can be an all day project getting that consistency just right…I decided to throw in some of the dehydrated cherry tomatoes. Whipped that through the food processor and got the thickest, sweetest sauce I’ve ever made.

It was like they were dry tomato paste. Went on a rampage from there…tomato jam…paste…from the paste, dehydrated that and got the powder. What a long strange trip.
