On both of my Samsung devices, it's in the 'Storage' section of 'Settings'. The exact menu hierarchy varies with the flavor of Android.

In 'Storage', you should see your USB drive, along with internal storage and SD drives. If you select the drive, you should have the option to 'Unmount'. On one of my devices, it's a text menu option named 'Unmount'; the other just has a down arrow symbol.
