I've also heard a quip that to get your PhD you "learn more and more about less and less until finally you know everything about nothing." From a friend's father.

Then there's always Orwell's quip, often paraphrased but attributed to him: "One has to belong to the intelligentsia to believe things like that: no ordinary man could be such a fool."

Bertrand Russell had "This is one of those views which are so absurd that only very learned men could possibly adopt them," but apparently claimed the sentence as his own.
