I'm just as happy with them with nothing but Tabasco on them, but this simple salsa rocks...

Canned black-eyed peas and corn (equal amounts). Red or orange bell pepper, chopped, and sweet onion (also chopped) if desired. Drain the cans well, mix them together and add a small amount of balsamic or red wine vinegar. It keeps well in a container in the fridge and is good cold or slightly nuked.
