4. Hooo boy, I don't want to touch this with my 14" fish slicer but "salsa" ain't the only salsa, and this is totally salsa

Having worked in kitchens for…longer than some of you have been alive, and having hung out a lot with the many Latinos that populate said kitchens, AND currently living and working in the DMV (DC/Maryland/Virginia) – "salsa blanca Virginia" is definitely, totally, said with absolute metaphysical certitude, a Salsa, a sauce for your food.

The Latinos I work with (admittedly vastly Central American, DC has a huge Honduran/Guatemalan/El Salvadorian population but shockingly few Mexicans as they tend to go farther north to NYC) all recognize and adore this stuff. Matter of fact, my first exposure to it was at staff meal at my first job down here; we had pupusas de pollo y salsa blanca…it was one of the better meals I've ever had (family meal tends that way, IYKYK) and I've been a fan ever since.
