4. Thai-ish eggplant curry

with shrimp and zucchini. It's Thai-ish because I only have Italian basil left in the garden. (The eggplants - Thai petch siam - are about the only thing that did well in the garden this year)

I've recently discovered Indian ginger garlic paste, which is a great time-saver.
