8. Scrambled eggs with ham, toast, hash browns.

Of course, the ham is leftovers, as is the bread. A lot of the ham is getting frozen, but we'll still be eating it for a few meals this week. I had a ham sandwich for breakfast this morning.

The hash browns were a test of my first foray into canning potatoes. They were supposed to be very small red/waxy potatoes, peeled and canned whole. I'm not fond of reds (too waxy), and the recipe was very insistent that russets wouldn't work, so I got gold. Since they were peeled anyway and I didn't want to pay for petite potatoes, I just cut regular sized golds up in designer potato-sized chunks.

I only did one batch, in case they didn't work well. I needn't have worried. They're done through, but firm enough to use for just about anything (but mashed). I'll be doing this again.

Now on to cake for dessert, and the last of the coquito.
