Made a huge pot this afternoon so the house smells fantastic. Green lentils cooked in veggie broth and water with bay leaves. Veggies steam-fried in veggie broth (in a separate pot): chopped onions, celery, carrots, red bell pepper, cabbage, zucchini, and minced garlic. When done add to the lentils and stir in tomato paste, fire roasted tomatoes, sliced mushrooms and steamed peas. Finally season with oregano, thyme, parsley and S&P. Multigrain toast on the side.
