5. Lentil Vegetable Soup

Wanted to use most of the produce I have on hand so I made a large pot of soup. I sweated in veggie broth and evoo: chopped onion, celery, carrots, green bell pepper, cabbage, leeks, sliced mushrooms and minced garlic. While that was cooking I cooked a lb. of green lentils in veggie broth with bay leaves. When the lentils were soft I added a couple cups of fresh chopped tomatoes and a can of tomato paste. The cooked veggies were added to the pot of lentils, I turned off the heat and added a bunch of fresh thyme from my garden to perfume the soup. I took the herbs out in about 5 minutes and added fresh chopped parsley and S&P to finish. Will have some nice crusty whole grain bread along with the soup when we eat in an hour. Cheers!🥂
